Recipe: Portugese Sausage Soup
Portugese Inspired Sausage, Peas, Bell Pepper and Potato (Mostly Low Carb)
1 large onion, chopped
1/3 lb loose mild (or spicy) sausage
2 red (for color) bell peppers, chopped finely
1-2 medium potatoes, scrubbed, unpeeled, cut into bite-sized pieces
1 lb bag of frozen peas
Approx 8 cups water or broth
Salt & Pepper
Fennel, parsley or cilantro for garnish
In oil (olive or other), saute onions until soft. Add in sausage, stirring until browned.
Add in bell pepper and potato, stir for a few minutes until they are soft.
Add in enough broth to cover and boil / simmer about 10 minutes until potatoes are cooked.
Add in peas, and cook about 10 minutes longer.
Garnish with your favorite herbs.
You can leave out the potatoes and then make it more like a stir-fry (without the broth), but then you will probably serve it with rice. The potatoes reduce the need for additional starches and create a nice base for the soup broth. Be forewarned, this recipe makes a large pot and makes the whole house smell amazing!
