Recipe: Cucumber Onion Salad, Low Carb
1/2 Red onion, thinly sliced
2 Cucumbers, bite size (some skin removed with a zest tool, as shown here, optional)
4 tbsp plain yogurt
Juice of 1/2 lemon
Fresh Dill (or in this case, fennel)
Salt & Pepper
Mix in a bowl. Eat. Enjoy!
